Honey Glazed Carrots with Sumac

Sometimes the simplest sides steal the show, and these honey glazed carrots prove it with just four ingredients! Sweet honey and tangy, lemony sumac coat tender baby carrots as they roast to a light caramelized finish, making a bright and colorful addition to any holiday table.

Serves about 4

 

The Carrots:

  • 1 lb baby carrots, washed and peeled
  • 2 tablespoons honey
  • 1 tablespoon dried sumac
  • Salt and pepper to taste


 

INSTRUCTIONS:

  1. Preheat oven to 350°F.
  2. After washing and peeling the carrots, cut each one in half from top to bottom.
  3. In a medium mixing bowl, combine the carrots and remaining ingredients. Mix by hand until the carrots are nicely coated.
  4. Place the carrots on a nonstick baking tray in an even layer and bake for about 20 minutes, until they just start to brown.

It's best to use baby carrots with the tops still on, and the greens can be used to garnish your platter for serving.
